Veggie Burgers

Easy burgers

My husband’s favourite TV channel is the food channel. So, last night, while he made me watch Jamie cook some simple recipes, I saw him make these vegetarian burgers with Coleslaw salad and I had to share it.

Ingredients:

  • 240 g canned beans
  • 200 g frozen peas
  • 1 spoon flour
  • 1 tsp coriander
  • 1 tsp paprika
  • lemon peel
  • 1 bunch coriander leaves

Firstly, you have to blend all of the above ingredients and form 4 “meatballs” which you will fry in sunflower oil until well cooked. This will be the central part of our burgers.

Afterwards, get on the salad (better than the one at KFC if you know what I mean…)

Coleslaw ingredients:

  • 1 red cabbage + 1 white cabbage, cut on the small grater
  • 1/2 red onion on the small grater
  • 3 spoons greek yoghurt
  • 1 tsp mustard
  • 1/2 squeezed lemon
  • 1 bunch coriander leaves
  • salt and pepper

Mix all of these really well and you’ll get the perfect Coleslaw.

Then, you can start assembling: you start with a bun, then add tomato sauce, the “meatball”, the coleslaw, tomatoes, pickles and a touch of feta and we’re done. Enjoy!
