Easy Vegetarian Chilly

I think I already told you that I’m all about easy cooking. I can’t be bothered to spend too much time in the kitchen, plus I love healthy and simple meals. So, here’s my latest recipe that takes around 40 minutes and it’s absolutely delicious!

Ingredients:

  • 1 large onion
  • 4 garlic gloves
  • 1 bell pepper
  • 2 carrots
  • 1 can red beans
  • 1 can white beans/chickpeas
  • 1 can tomato juice
  • 2 cups of corn
  • 2 tbsp cumin
  • 1 tsp oregano
  • 1 tbsp chilly powder
  • 2 tbsp olive oil
  • salt and pepper

Firstly, heat the olive oil in a pot and add the diced onion and the garlic. Let them cook for about 3 minutes, then add the cumin, oregano and chilly powder. When they have softened, start adding the other chopped vegetables: the bell pepper and the carrots. After you give everything a good stir, add the tomato juice and let it cook for 20-30 minutes without a lid, over low heat.

Next phase is to rinse the beans, then add them to the chilly. Also, add the corn and let it all cook for another 5-10 minutes. Finally, season with salt and pepper to your taste and you’re done! You can top it off with parsley or green onions for extra flavour and good looks!
