Easy Mussels Soup

My mother cooked this very simple yet delicious recipe during the weekend. And me, being all about easy cooking, I figured it was the perfect recipe to share. Here’s how it goes:

  • 1 bag of mussels
  • 1 onion
  • 2 cloves garlic
  • 1 glass of white wine
  • 1 lemon
  • 1 tbsp curry
  • 2-3 potatoes
  • salt and pepper
  • olive oil
  • sour cream
  • parsley

Firstly, chop the onion and the garlic into big slices and add them to a pot with little olive oil in. After 5 minutes, add the mussels, salt and pepper and sprinkle some lemon peel. After they are alomost cooked (almost open), add some curry,  then set aside and let it cool off.

In another pot, add 3 potatoes cut into cubes, the soup from the mussels and some sour cream and cook until the potatoes are soft and the soup has thickened. Once it’s cooked, blend it really well with a mixer, then add the mussels (removed from their shell, of course) and sprinkle some parsley on top! Now enjoy!
