Always on the hunt for simple recipes, I came across this veggie deliciousness in a book and thought I’d share. Here are the ingredients:
- 300 g eggplant
- 350 g mozzarella
- 200 g zucchini
- 300 g tomatoes
- 8 basil leaves
- 3 tbsp olive oil
- salt and pepper
Cut the eggplant into thin slices and grill them on both sides, then set them appart.
Cut the zucchini into long, thin strips and boil them for 1 minute with salt, then set them aside.
Cut the tomatoes and mozzarella into round slices.
In a tray, after preparing it with olive oil, start assembling from the bottom up: one slice eggplant, two slices of zucchini, then a tomato slice, salt and pepper, a mozarella slice, a basil leaf, another eggplant slice, then another mozzarella slice and some extra salt and pepper.
Cook them in the oven at 180 degrees Celsius until the mozzarella is melted. Once they’re cooked, sprinkle some basil on top and enjoy!
