Easy Meals: Chinese Chicken with Vegetables and Rice

For those nights when you feel tired, ordering in (especially chinese food) is the only solution that jumps to mind. But what if I tell you it’s just as easy to cook a delicous meal yourself? This should take around 30 minutes and will surely impress your better half!

Ingredients:

  • 600 g chicken breast
  • soy sauce
  • 2 carrots
  • 1 red onion
  • 1 clove garlic
  • 1 bell pepper
  • tomato sauce
  • 1 bag rice

Instructions:

Cut the chicken into thin strips, add olive oil, soy sauce, curry and pepper and let it sit for 15 minutes.

Cut all the vegetables into thin strips. Then, in another pan, add the carrots, followed after a few minutes by the onion and garlic and lastly, add the bell pepper. Finally, add tomato sauce and stir continuosly. When your veggies are half way cooked, add the chicken, continuing to stir. It all takes around 15-20 minutes.

Separately, place the bag of rice in boiling water for around 10 minutes. When it’s done, start assembling your plates with 3 spoons of rice at the bottom and top them with the delicious chicken. Enjoy!
