Banana Pancakes

They say breakfast is the most important meal of the day. What they don’t say is how we never get enough time to savour it properly. So, at least during the weekend, why not treat yourself to a delicious breakfast that’s both healthy and really easy to make?



  • 1 banana
  • 2 eggs
  • 2 tablespoons of oats
  • coconut oil/butter (for cooking in)

Firstly, place the banana, eggs and oats in the blender and mix until it’s all well blended together.

Place a tbsp of coconut oil or butter in a frying pan and turn on the heat.

Pour a small part of the composition into the pan (for one pancake) and let it cook until it turns brown around the edges. Do not flip it before it’s well cooked on one side because it will break. Once you’ve flipped it, keep it for just one minute on the other side and you’re done.

Repeat until you’ve used all the composition – it should be enough for 4-5 pancakes.

Goes best served with maple syrup and add strawberries or blueberries on top!
