Almond Milk Banana Muffins

Don’t we all love home made sweets? But they can prove quite challenging for those lacking hours of experience in the kitchen (myself included). This recipe is really simple, delicious and quite healthy and you can always switch up the ingredients to your liking: almond milk for regular milk, brown flour for white flour and bananas…well, you can mix them with blueberries or raisins for an extra flavor. Here goes:

Ingredients:

  • 2 large bananas
  • 400 g brown flour
  • 1 tbsp baking soda
  • 1 tsp cinnamon
  • 320 g brown sugar
  • 120 ml almond milk, warm
  • 1 tsp vanilla extract

Turn on the oven and set it at 200 degrees.

Cut the bananas in three parts and blend them until they become smooth.

In a bowl, mix the flour, baking soda and the cinnamon. In a separate bowl, mix the brown sugar with the warm almond milk and the vanilla extract. Slowly, incorporate the blended bananas into this last mix, then pour it over the flour. Do not stir too much and if it looks too thick, you can always add extra milk.

Then place the composition into the muffin tray, but do not fill it completely, only about half way as they will grow. Bake them for over 15 minutes (until they turn golden) and you’re all set! Enjoy!
